GRAPES: 100% Syrah
VINEYARD: 15-16 year old vines, from 34 different parcels, planted on Pleistocene origin soils at 270/310m altitude, across 8.5 ha in Poggiobella del Farneto (near Cortons)
CELLAR: harvesting 4th week of September. A portion of the grapes are fermented as berries, another portion as whole cluster. For those left whole cluster a further portion are lightly foot pressed in small cement vats filled by hand. 35 day fermentation without temperature control and with light punching down. After drawing off, with the berries and the clusters still intact, they are soft-pressed. All the different parcel rest separately until bottling, in different vats, concrete , ceramic, big botte, depending on the singular expression of the different wines,. All racking occurs without the use of pumps. After bottling, the wine is aged for one more year in bottle.
CELLAR ADDITIONS: a few grams of SO2
TASTING NOTE: this wine will reach maturity at 4 years; plateau is between 7-10 years.
